Ingredients
I suggest you buy good quantities of the ingredients so you can make a pile of bars and stock up your freezer. The recipe here makes 12 – 15 bars. But be warned - they don’t last long!
1. Oatmeal - 1 and half cups.
2. Oat Flakes (or millet or barley) - half a cup.
3. Ground Almonds - 1 cup.
4. 4 eggs.
5. Chopped Dried Bananas (the chewy sort) - 2 and half cups.
6. Fruit Sugar - 5 Tablespoons (to taste).
7. Soya Milk - 1 cupful.
As you see, I use fruit sugar, which has a low GI, in preference to any of the low calorie substitutes. This is because I want calories here.
Variations
For a slightly different taste you might like to add 3 or 4 teaspoons of Ground Ginger (or sweet Mixed Spice).
Half a cup of Ground Flax Seeds can be ‘helpful’ too if you need help in that department.
Half a cup of Chopped Walnuts substituted for some of the ground almonds will give you a more crunchy texture.
Method
1. Spread Chopped Dried Bananas on a flat dish and heat in microwave for 1 minute.
2. Mix all the other ingredients in a bowl - except, eggs, Soya milk and fruit sugar.
3. Rearrange Chopped Dried Bananas in microwave and heat for another minute.
4. Place all Soya milk in a bigger vessel and heat for 1 minute in microwave.
5. Place heated Chopped Dried Bananas in a mixer.
6. Add all fruit sugar to heated Soya milk.
7. Add half of sweetened milk to Bananas and mix to as near a paste as you can get.
8. Crack open the eggs and add to the paste and mix.
9. Add all other ingredients and mix thoroughly.
10. Add more Soya milk if necessary to keep mix sloppy.
11. Scoop into an 8.5 inch/22 cm baking tray (best lined with non-stick paper) and bake in hot oven for 30-35 minutes.
12. Slice into 12 or 15 chunky bars when cool.
13. Freeze what you don’t need right now.
14. Hide the rest (especially from kids) so only you can get at them.
And there you have 'em:
